ANATOMY OF A CACAO POD: Cut open, the beans inside are exposed. There are thirty-five in each pod. Each bean is tethered to a medial core called the placenta. Cacao beans are composed of an outside shell, and an inside nib.

AUSTRALIA’S JACK ROSS is remembered best for being the last surviving veteran of World War I, as well as that country’s oldest man at the time of his passing in 2009, at the age of 110. What does a man of that age want for his birthday? Mr. Ross’s only request was a birthday wish from his daughter and a cup of hot chocolate.

HAWAII is the only one of our states that grows cacao beans commercially for chocolate production.

PROFOUND WORDS SPOTTED ON THE WEB: “Chocolate . . . Sweet as the love that inspires it . . . Bitter as the pain it consoles.”

A FAVORITE QUOTE FROM A REALLY OLD EPISODE OF FRASIER: Roz said a mouthful when she said, “Chocolate covered raisins; I’d like to meet the idiot who came up with these. Take a grape, let it shrivel into a disgusting little wart, and cover it with perfectly good chocolate!”

PAIN AU CHOCOLAT: Don’t let the name scare you. This French pastry’s name, literally translates as “chocolate bread.” It’s a puff pastry with delicious chocolate pieces throughout. In the U.S. we call them chocolate croissants — and they are anything but painful!
